Sweet Potato Bread & Muffins

We have been asked for many years on how to use our sweet potato flour, and the simple answer is USE IT IN EVERYTHING.

Jamestown Mills brought this out as a nutritional enhancer for baking, but found through our customers that it can be used in pretty much anything, such as a meat binder in loaf, keeping moisture in cookies, and just adding nutrition.

Beta Pro can be used with any recipe as an additive, you can substitute or add in small amounts to your ingredients.

Beta Pro has natural binding abilities, because of its starches and natural characteristics of a dried vegetable.

For bread: place all ingredients in a mixing bowl and mix thoroughly. Place in a bread machine pan and bake on fast cooking cycle with medium baking control.

For muffins: In a large bowl combine all flours, milk powder, salt, baking soda, guar gum, yeast and mix well. Set aside. Combine remaining ingredients in a bowl and mix well until blended. Add dry ingredients and mix well. Spoon in to greased muffin tins and let rise for 30min….bake at 350F for 20-24 mins. …makes 18 med sized muffins.
