Preheat oven to 375°F. Whisk together dry ingredients; set aside. Cream shortening and sugars, add egg (or egg replacer) beating on high until fluffy. Add dry ingredients, blend until well mixed, add chips (and nuts). Drop from teaspoon 2 inches apart on ungreased cookie sheet. Bake 10 minutes. (bake 8-10 mins) Do not overcook. Remove from oven, let cool on cookie sheet until firm, finish cooling on rack. Try adding some of our Beta Pro sweet potato flour for an added health kick.

Chickpea Flour Cookies

Beat butter & powdered sugar together until creamy. Add egg yolk & cardamom.Knead in the chickpea flour until smooth. Roll dough into balls between the palms of your hands. Decorate the tops of the cookies by pricking them with the tines of a fork or by pressing the back of the tines horizontally onto the cookies. Place on a lightly greased cookie sheet and bake in a slow oven (300F) for about 30 minutes. This dough is very “short” and needs to be well kneeded. For an even “shorter” dough, omit the egg yolk Add our Beta Pro sweet potato flour to add in a healthy benefit and flavour.
