We have been asked for many years on how to use our sweet potato flour, and the simple answer is USE IT IN EVERYTHING. Jamestown Mills brought this out as a nutritional enhancer for baking, but found through our customers that it can be used in pretty much anything, such as a meat binder in loaf, keeping moisture in cookies, and just adding nutrition. Gluten-free potato bread

Heat potatoes. Mash lumps. Cream with butter and sugar. Add egg yolks. Beat well. Sift dry ingredients and alternately add to the mixture with milk.(You can add up to ¼ cup of sweet potato flour for more intense flavour, but add in more milk) Fold in egg whites, which have been beaten to hold soft peaks. Pour mixture into an 8 x 4-inch greased pan. Gluten-free moist brownies

Melt margarine in a 9 x 12-inch pan in a 350 degree oven. Remove pan from oven. Mix dry ingredients well. Add honey or syrup, vanilla and eggs to the dry ingredients. Mix well but do not over-mix. Add melted margarine and blend well. Pour batter into a well-greased pan. Place pan on top shelf of oven and bake at 375 degrees for 35 to 40 minutes. Let brownies cool. Frost if desired, then cut and refrigerate. Preheat griddle or large skillet (if electric) to 375 F. Grease lightly with oil. Mix dry ingredients together; add egg, milk and butter or margarine, beating well after each addition. To add that extra health kick just add a 1/4 to 1/2 tsp some of our Beta Pro sweet potato flour. Pour 1/4 cup batter for each pancake onto hot griddle. Cook 1 to 1½ minutes, turning when edges look cooked and bubbles begin to break on the surface. Continue to cook 1 to 1½ minutes or until golden brown.

Preheat oven to 375°F. Whisk together dry ingredients; set aside. Cream shortening and sugars, add egg (or egg replacer) beating on high until fluffy. Add dry ingredients, blend until well mixed, add chips (and nuts). Drop from teaspoon 2 inches apart on ungreased cookie sheet. Bake 10 minutes. (bake 8-10 mins) Do not overcook. Remove from oven, let cool on cookie sheet until firm, finish cooling on rack. Try adding some of our Beta Pro sweet potato flour for an added health kick.

Beat butter & powdered sugar together until creamy. Add egg yolk & cardamom.Knead in the chickpea flour until smooth. Roll dough into balls between the palms of your hands. Decorate the tops of the cookies by pricking them with the tines of a fork or by pressing the back of the tines horizontally onto the cookies. Place on a lightly greased cookie sheet and bake in a slow oven (300F) for about 30 minutes. This dough is very “short” and needs to be well kneeded.
